- Pat the chuck roast dry and put it straight into the slow cooker. Browning is optional here and most cooks skip it; eight hours of slow cooking builds the colour on its own.
- Sprinkle the ranch seasoning over the whole surface of the meat, then the au jus packet. Do not stir and do not add any liquid: the roast and the butter release more than enough.
- Lay the stick of butter whole on top of the roast. As it melts it carries the seasoning down the sides of the meat.
- Scatter the pepperoncini around and on top, and pour over two tablespoons of brine from the jar. The peppers are not there for heat; their acidity is what keeps this rich dish from being heavy.

Spicier. Slice three pepperoncini open and add a teaspoon of their seeds.
Pot roast sandwiches. Pile the shredded beef onto toasted brioche rolls with provolone and let it melt under the grill.
Serving Ideas
Mashed potatoes are the classic bed for this, and for good reason: the gravy needs somewhere to go. Buttered egg noodles or plain white rice do the same job.
Serve something sharp alongside — a crisp slaw, pickled onions, or simply the extra pepperoncini from the jar. The dish is rich, and it needs that contrast on the plate.
For a crowd, keep the cooker on warm in the middle of the table with rolls beside it and let people build their own sandwiches. It is the easiest way to feed ten people without plating anything.
Keeping It Fresh
Keep the shredded beef in its gravy in the fridge for up to four days. Stored dry it goes stringy, so always cover it with the sauce.

Can I make it in the oven?

Can I use a different cut?
Chuck is the right cut because of its fat and connective tissue. Brisket works but stays firmer; a lean cut such as round will come out dry no matter how long you cook it.
